I wanted to link to this recipe recently, and I clicked on over to it only to discover that it was kind of a train wreck. Totally un-printable, with photos intermingled with directions and ingredients. It was , what can I say? And there was no such thing as a handy-dandy recipe card plugin. I am making my homemade granola bars, they're chewy and sweet and they've got a great nutty crunch and they're one Bowl recipes. So I'll just mix everything up top with candy, coated chocolates, apricots and nuts and bake. I'm gonna start with a can of sweetened condensed milk. This is gonna bind the granola bars together and it'll also add great sweetness and I'll also add half a Cup of cashew butter.
You can use any nut or seed butter here, but I'm using Cashew butter today because I love the combination of cashews with apricots Cashew butter is. Delicious and smooth, so this will add tons of rich texture to the granola bars and that great nutty flavor.
Add this right in. I'm gonna add one tablespoon of vanilla extract for some nice flavor and half a teaspoon of kosher salt. And I'll mix this to combine If you wanna add other flavor extracts different nut butters or seed butters tahini is great knees use whatever you have on hand. This is looking great and smooth and combined. I'm gonna add my oats. I'm gonna add three and a half cups of quick cooking oats, and it's important to use quick cooking out here because they're smaller pieces that incorporate more easily into the mixture, giving you a chewy bar.
And I like to up the nutrition in these by adding some seeds so any sort of seed mix today. I'm gonna add flax seeds and then one Cup of roasted salted nuts. I'm using a mix of almonds, walnuts and hazelnuts here. And I'm gonna save a few to add on top as well.
And now mix this to combine this mixture is looking great. I'm gonna grab my pan. I've lined the pan with parchment so that it comes up about an inch above the pan and these little wings are gonna help me lift the bars out of the pan once they're baked. So I'll pour this right in. I have made so many batches of these, I make a big batch and then keep them in the fridge or freezer and they keep for quite a long time.
I'll press this mixture out so that it's even and these bars come out, nice and thick. Before they go in the oven, I'm gonna make them really pretty I'll top them with these colorful candy coated chocolates.
I'll press them into the top so that they stay and now I'll add some dried apricots and these are great. These are ready to bake. I'll bake these at degrees for 20 - five minutes until the edges are golden and pulling away from the sides. They're gonna be so nutty and delicious and packed a ton of power My granola bars are perfectly browned around the edges and they're so colorful. I love them already. I'll let them cool slice them into bars and package them up.

One of the questions I get most these days is how my cooking has changed now that Bernie is around. The answer is that I have a whole new appreciation for quick one-bowl recipes, recipes that require minimal chopping or actual heating, and anything that can sit nicely and well-behaved for 10 minutes if at any point I need to drop it and feed Bern. This is because, unless Bernie is having Grandma or nanny time, she is most likely attached to me. Her bouncer and play pads are cool and stuff but she is often over them after like five minutes so I have to use that time strategically and schedule it for the 10 seconds when I need to put something in the oven or chop up an onion.
